Shitake Lentil Soup

Soups’ on!  Soup is a great easy meal.  Make double batch of your favorite soup and freeze some for an easy dinner in a couple weeks!

Shitake Lentil Chili

1 cup cooked lentils (about ¼ – ½ cup uncooked)

1/2 cup shitake and chopped de-stemmed

1/2 cup red bell pepper chopped

1/2 zucchini diced

1/2 cup onion

3 Roasted garlic cloves

1 tsp spicy jalapeño

1 Cup veg broth

½ cup chopped tomato

1 TBS tomato paste

Spices

2 tsp Cumin

1 tsp nutmeg

2 tsp parsley

1 tsp fenugreek

1 tsp mustard seed

1 tsp pepper

1 tsp tumeric

1 tsp cayenne

Sauté the onion and garlic.  Add in the spices, and the zucchini and jalapeño.  Sauté until just soft, and then add everything else.  Cook for about 20 – 30 minutes and serve.  Taste it and see if you want to add some cayenne for extra spice.
